Due in large part to the cocktail renaissance of the last few years, shrubs have come screaming into the present from an era when the United States were but a gleam in the Founders’ eyes. Shrubs are an old method of preservation, and when done properly, you can enjoy the fruits of summer’s labors in the dead of winter. They’re used in cocktails in a similar fashion to syrups. The component parts are a subject, a sweetener and vinegar. We’ll break down how to do a basic shrub and what the rules are, so that you can break them when you make your own. There’s a bit of science involved behind the scenes, and the whole process is based in fermentation, but don’t let that shake you. Making a shrub is as easy as discovering penicillin, when you get down to it.
National Parks Pass in our hot little hands, we set out through downtown Moab, marveling at the idiosyncrasies and contradictions of the tourism-based economy. We had a specific loop planned out for our tour, hitting a few vistas and stopping at the Sand Dunes Arch. Even within the small span of the park the landscape was constantly changing from sheer red rock walls to rolling hills dotted with juniper to gray, green and yellow dunes, frozen in time.
The biggest market in town is just down the street, and while it took some time, we’ve got a decent handle on which are our favorite stalls and who doesn’t rip off the gringos. We still stick out like sore thumbs because we’re 4 inches above the average height, but we’re getting better at being confident and nondescript. All the same, we do get rolled from time to time. A dollar for 3 pears? Fuck you, Abuelita, I don’t give a shit if yours are the best in the market.
The rocks of the cliff side whistled and jeered, both mocking and celebrating our presence. The towering spires, remnants of ancient red sand dunes, looked as if an alien forest had left its eulogy in the land itself. The crushing scope was like nothing I’d ever seen; the red spikes climbing up from the valley floor towards us, the vicious gash carved by the Colorado River, the stretch of scrubby grasses and shrubs flowing out past the Six Shooter Mesa in the distance, the slow roll of the sparse clouds on an azure backdrop, all of it incredible.
Once you’ve mastered basic drinks, you’re ready to riff on them. Learning the rules allows you to break them. Since our options at the liquor store are scant, we’ll mostly be doing this with different infusions and different house-made syrups. We’ll take a trip to the market with the next few posts and play around in the kitchen.
If the utility of a road is compromised due to the whims of bovine, it should not, in fairness, be called a highway. Consider this my formal complaint with the state of New Mexico. The cow strutting out of the darkness before us was such an absurdity we erupted into astonished laughter. Then there was more movement. A group of shadows fell into focus. The laughing stopped.
Take heart, gentle traveler, for there is a way to mindfully take joy in the true national treasures of the United States. The men and women protecting our parks are fighting an uphill battle to protect us from ourselves, and we can help them. Follow the rules posted on the clearly posted signs. They are meant to protect both you and the wildlife. Place trash in proper receptacles. They’re everywhere. Adhere to the trails. The maps are free and comprehensive. Do not try to steal the limited, federally-protected nature. Basically, don’t be terrible.
As we bombed down the highway towards White Sands, we could eventually see a thick, white ribbon slicing across the ruddy leather-colored floor of the valley that opened up before us. The mountains at the far end were so far away they sat on a flat plane, a deep blue silhouette. The scenery was stark and stirring. With everything so visible for miles all around, your eyes tend to play tricks, and with the speed limit so high, the distances seem to melt like candy in the sun. We stopped in Alamogordo for some sandwiches, then headed off past the airbase and the missile testing range before finally arriving at White Sands.
